SMOKED PORK BUTT ! (Pork Shoulder )
Purchase a nice Pork Shoulder ( Pork Butt )
You will need an injector ( can be bought at any grocery store)
Simple injection recipe: 50% apple juice / 50% white wine)
Then Dry rub your pork butt :
I use: brown sugar, paprika, garlic & onion powder )
Then inject with brine mixture.
Cover & Place in fridge overnight
Next day I Put in smoker @ 200 degress for about 4-5 hours
I like to use Apple wood for Smoking Pork .
After Smoking let cool........
I then re- inject with my favorite BBQ sauce. ( I use OPEN PIT)
I cover & put on gas grille for another 3- 4 hours at 300 degrees .
I then glaze pork on grille (direct heat- out of foil ) for a few
minutes and pull off and let stand for 30 minutes before slicing
Slice an ENJOY !!!!!
