I Love Onion Mushroom Soup !
I like to use Sweet Onions
I use low salt beef broth as a base:
I add tyme, onion powder, white and black pepper
and bring to a boil....
I also like to add 1 or 2 beers to broth
Let broth boil as you prepare onions.
Cut up your onions
I like to glaze onions before putting in soup (20-30 minutes)
I use a little butter and olive oil.
I also add a little fresh chives.
After reducing add to broth .
I then chop and clean fresh mushrooms.
Saute/Reduce mushrooms in same pan , that you reduced onions
in.
Render down and add to broth.
I drain off extra water.
Add all together and enjoy.
Note: added fresh mushrooms and chives as garnish.
Dried onions also used as garnish....+ fresh chives...
